In a bowl, combine peaches and sugar. Transfer to two greased 6-oz. baking dishes. Combine the oats, flour, brown sugar, and almonds.
Cut in butter until mixture resembles coarse crumbs. Sprinkle with almonds extract; toss. Sprinkle over peaches. Bake, uncovered, at 375 degrees for 30 minutes or until bubbly and golden brown.
Apple crisp: Peel and slice 2 medium tart apples and use in place of the peaches. If desired, mix 1/8 tsp. ground cinnamon with the sugar before sprinkling it over the apples.
