3-4 cups sweet potatoes peeled and chopped into chunks
2 eggs beaten
1/2 cup sugar
1/2 tsp salt
1/2 stick melted butter
1/2 cup milk
1 1/2 tsp vanilla
for topping:
1/2 cup brown sugar
1/3 cup flour
1/2-1/3 stick melted butter
1/2 cup pecans
Instructions
Boil potatoes until fork tender. Drain then transfer to large mixing bowl (I roughly mash them before adding everything else, its easier). Mix in all ingredients, beating on low until well blended.
Spray 1 1/2 quart shallow baking dish with non-stick cooking spray. Transfer potatoes into dish.
Mix together topping ingredients and spread over potatoes. Bake uncovered at 325 degrees for 30-35 minutes.
