Cut a slit in the side of each chicken breast to form a pocket; place cheese inside. Take 2 pieces of bacon and lay in cross shape. Place chicken on top; wrap as tight as possible with bacon, using toothpicks to secure. Season with lemon pepper; marinade in Italian dressing. (Better to marinate overnight.) Start fire; when coals are white, push to one side and put chicken bundles on the opposite side. Cook approximately 1 hour. Before ready, brush with barbecue sauce. (Add wet Mesquite chunks for good smoke flavor.)
