1 tbsp. extra virgin olive oil
|
|
10 oz. boneless skinless, chicken breasts, cut into bite-sized pieces
|
|
1 1/2 tbsp. chili powder
|
|
1 1/2 tbsp. cumin
|
|
2 14. 5 oz cans diced tomatoes
|
|
1 15 oz. can mixed vegetarian chili beans (or red or black)
|
|
1 c. whole kernel corn, frozen or canned (drained)
|
|
salt and cayenne pepper, to taste
|

Instructions |
|
|
In a medium saucepan, saute chicken in oil over med. high heat for 3 minutes or until white.
|
|
|
Stir in chili powder and cumin to coat chicken. Saute 3-4 minutes.
|
|
|
Add remaining ingredients and simmer for 30 minutes or so. The longer it sits the better and is better the next day heated up.
