4 quesadillas

Peanut Sauce- 1/2 cup peanut butter
|

1/2 cup hoisin sauce
|

1 tbl honey
|
|
2 tsp red wine vinegar
|

2 tsp ginger, minced

2 tbl sesame oil, roasted
|

2 tsp soy sauce
|
|
1 tsp Vietnamese chili sauce
|
|
1 tbl oyster sauce
|
|

2 tbl water
|

Toppings- shredded mozzarella cheese
|
|
cooked chicken, shredded (leftovers?)
|
|
carrots, grated
|
|
green onions, chopped
|
|
cilantro, chopped
|
|
bean sprouts
|
|
peanuts, chopped
|

8 flour tortillas
|

Instructions |
|
|
Over medium heat, combine peanut sauce ingredients in a sauce
pan. Boil 1 minute, then remove from heat.
|

|
Spread 2 tablespoonfuls of sauce on each tortilla.
|
|
|
Layer mozzarella, chicken, carrots, green onion, cilantro, bean
sprouts, peanuts, and more mozzarella over peanut sauce.
|
|
|
Top with tortilla and brown with small amount of butter in a large
pan. Slice and indulge!
