In a skillet saute onions until they are clear.

Add cumin, coriander, turmeric, cinnamon and cayenne, continue cooking for a few minutes being careful not to burn.
|

|
In a blender or food processor combine apple juice, yogurt and onion mixture and blend until smooth. Place sauce back on stove-top and re-heat. If sauce is too runny leave it on the heat to thicken.

|
Add steamed cauliflower, chick peas, or your choice of other steamed vegetables to the sauce and serve over rice.
