In mixing bowl stir together flour, sugar, baking powder, and salt. Combine egg, milk, and oil; add all at once to flour mixture, stirring until blended but still slightly lumpy. Pour about 1/4 cup of batter onto a hot lightly greased pan for each pancake. Cook until golden brown, turning to cook other side when pancakes have a bubbly surface and slightly dry edges. Makes about eight 4-inch pancakes.
Note- To get more pancakes we usually add a bit of extra milk to water it down, still tastes the same and still extremely filling. If you are using the mixture to make waffles, don't add the extra milk.
