4 Tablespoons hot pepper sauce (I like Tapatio) (adjust for hotness)
1/4 cup crumbled blue cheese
1/4 cup plain fat-free yogurt
1 Tablespoon reduced-fat mayo
6 celery stalks, trimmed
Instructions
Option 1- In a large skillet or pot, cook chicken with vinegar,
chicken broth, vegetable oil, and pepper sauce until cooked. One
might also add in a cornstarch mixture to make the sauce extra
thick.
Option 2- Marinade the chicken in the broth, oil, vinegar, and
pepper sauce in the refrigerator for approx 30 minutes or so
(longer is ok, too). Spray the broiler rack, broil the chicken 5 inches
from heat, turning once, until golden and cooked through, about
10 minutes per side.
Then, in a small bowl, combine the blue cheese, yogurt, and
mayonnaise. Serve wth chicken drumettes and celery.
