2 whole grain pita breads—halved, opened into pockets
2 Skinless, boneless Chicken Breasts
Olive Oil, Basil, Oregano, Garlic and Lemon Juice to taste.
Instructions
For chicken souvlaki, cut skinless chicken breast into chunks. Place on wooden skewer. Drizzle with olive oil, a sprinkle of basil and oregano, freshly grated garlic and lemon juice. Cook in oven until chicken is no longer pink inside. Remove Chicken from Skewer.
Mix together all the ingredients, except the hummus and bread, in a bowl until well combined. Spread 2 tablespoons of hummus inside each pita and fill with equal amounts of the filling to serve.
