2 lbs. boneless beef chuck roast, cut into 1 inch pieces
2 medium onions, thinly sliced
4 carrots, cut into 1/2 inch slices
1 clove garlic, minced
2T cooking oil
1/4 cup flour
2/3 cups beef broth
2/3 cup Budweiser
1/3 cup chopped fresh parsley
2 tsp brown sugar
1-1/2 tsp vinegar
1/2 tsp caraway seeds
1/2 tsp dried thyme
1 bay leaf
1/4 tsp salt
1/4 tsppepper
Instructions
In 2-1/2 quart casserole, combine beef, onions, carrots, and garlic. Set aside.
In a medium saucepan, heat oil over low heat. Stir in flour. Cook and stir for one minute. Stir in broth and beer. cook and stir till beginning to thicken. Add remaining ingredients. Mix well. Pour over beef.
Cover and bake at 350 for 1-1/2 hours. Uncover and stir. Leave uncovered and bake for 1 more hour, stirring after 1/2 hour.
