Place shrimp, egg, sherry, cornstarch, salt and pepper in a food
processor and whirl until a smooth paste is formed
Remove to a bowl and stir in water chestnuts and ginger. Spread 2
tablespoons of shrimp mixture on each slice of bread
Freeze 15 minutes or until bread can be easily cut. Cut diagonally
in quarters.
In a medium skillet, heat oil and add a few pieces of frozen shrimp
bread mixture, shrimp side down. Turn and fry on the other side,
drain on paper towels.
