1 1/2 pounds red potatoes, quartered
|
|
2 tablespoons white wine vinegar, I used the apple cider type
|
|
1 tablespoon EVOO!!
|
|
1/4 teaspoon salt and pepper
|
|
1/4 cup sliced green onions
|
|
2 teaspoons chopped, fresh parsley
|
|

|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Place potatoes in medium saucepan. Cover with cold water; bring
to a boil. Cook for 8 minutes or until tender; drain. Cool
|

Combine vinegar, olive oil salt and pepper in a large bowl, stirring
well.
|
|
|
Add potatoes, green onion and parsley to vinegar mixture; toss
until potatoes are thoroughly coated with vinaigrette.
