Place walnuts, sugar, and water in a small saucepan over medium heat. Stir until sugar melts. Continue to cook, stirring occasionnally, until sugar turns golden and coats walnuts - about 6-8 minutes. Coool and break into small pieces.
Combine vinegar through olive oil in a jar. Cover tighly and shake to emulsify. Set aside.
Wash spinach and place in a bowl. Add strawberries along with walnuts (minus a few for ganish). Top with vinaigreet dheese and last of walnuts.
