Mix apples, sugars, flour and cinnamon together. Place in pie crust and dot with butter.
Place top pastry on, and slit a few vent holes, mark with an A. Brush with a little milk or cream all over, sprinkle with white sugar lightly.
Flute edges with thumb and bake 15 minutes at 450 degrees, then turn down to 350 and bake for 1/2 hour till dark golden and bubbly, and apples are soft.
