Mix together first 6 ingredients into stock pot and bring to boil. In a separate pan, melt butter and add onions. Carmelize onions. Put into base mix. Ladel into soup crocks or oven safe bowls. Place 1 slice of french bread or equivalent croutons on top. Cover with one slice of cheese. Bake at 350 for approximately 10 min. Cheese should be melted and light brown. Serve hot.
