pre-heat oven 180 degrees.c/gas mark 4.grease and line cake tins.weigh out butter/margarine,sugar,flour and placein large mixing bowl.add eggs,baking powder and vanilla essence.whisk with electric hand or normal mixer for 3-4 miniutes.
divide cake equally between two tins.bake for 15-20 minuites.remove from oven after that time-carefully remove from tins and cool on a wire rack.
make butter cream.=cut butter/margarine into small pieces and place in a large basin.add sieved icing sugar.whisk until smooth, again with either electric or normal mixer.
when cake is cold, spread jam on one half of cake and butter cream on the other, sandwich together,sprinkle with sieved icing sugaror caster sugar.flavourings can also be added to the basic mixture eg-25g cocoa, zest of 1 lemon, 1-2 tsp coffe-dissolved in 1 tbsp hot water.
