1 lb Italian Sausage

1 Small Onion, chopped

1 tsp Chili Powder
|

1 Dash Cayenne Pepper

2 Eggs

6 Flour Tortillas

1 Cup Monterey Jack Cheese Shredded

Instructions |

|
Cook Potato in water for 35 minutes untl tender. Cool
|
|
|
Peel and cut cooled potato into cubes.
|
|
|
Brown Sausage in frying pan, add chopped onion, chili powder and cayenne pepper.
Cook 10 minutes. Drain and discard fat.
Add cubed cooked potato
|
|
|
Beat eggs and add to pan. Stir until eggs are set. Spoon mixture into cent of warmed tortilla and top with shredded cheese.
