Preheat oven to 375
Dice onion and tomato, then mix with cheese, butter, basil, mustard, salt & pepper.
Place 1/2 mixture onto center of each chicken breast, add 1tbs butter to each, then roll the chicken up so it fully covers the mixture.
Place chicken bundles on a piece of clear wrap, then bring the edges of the clear wrap to the top and twist together until firm. Refrigerate for about a half hour.
Beat the egg in a bowl. Unwrap the chicken bundles, cover them in the egg, and then cover with bread crumbs. Wrap them once again in the clear wrap to get the shape back, and then place in a baking dish and put them in the oven for about a half hour, pouring a bit of of oil on top.
