Rinse black beans, put them in a large pot and add water until covered 1/4 inch. Add half green pepper and onion. Add lemon pepper, garlic powder and onion powder, let set over night. The longer they set the better. We have let them set for three days.

Remove the green pepper and onion from the pot and place on stove. bring to a boil over medium heat. Reduce heat and simmer for about an hour.

While the black beans are simmering. Puree the rest of the green pepper, onion and garlic in a food processor or blender. Add the olive oil to a pot over high heat. When the olive oil is very hot add the puree slowly, be carful because it will splater. Cook mixture until it turn a dark green. Add the mixture to the black beans.

Let the black beans slow cook until they are soft enough to eat. 3 - 4 hours.
