I baked, then shredded. I've also baked the chicken ahead, frozen it, then placed the frozen breasts in the crock-pot and shredded later. That worked really well.
I just made this recipe up. I needed a quick Mexican style chicken, and just used what I had on hand.
For Chipotle-style burritos, layer chicken, Cilantro Lime rice, black beans, and corn salsa in a tortilla or by itself.
