In one large pot cook meats and veggies in 2 Tbs oil. In smaller pot make a roux by browning the flour on low heat, stirring constantly. when flour is brown, add oil and stir until smooth. Add roux to meats and veggies mixture. Stir well and add approx. 6 c. water. Let simmer until meat is tender and veggies are soft.
