1 c snow pea pods or 1 (6 oz.) pkg frozen snow pea pods
3 TBSPs chopped parsley
Instructions
Cook and stir chicken, onion and garlic in hot butter in lg skillet until chicken is lightly browned. Mix broth and cornstarch in small bowl; stir into chicken mixture.
Add carrot, lemon juice, lemon rind and salt.Cook and stir until mixture thickens and comes to a full boil. Stir in rice, snow pea pods and parsley. Cover; remove from heat. Let stand 5 minutes. Fluff with fork.
