Pretty much any other like veg you want to throw in
3 tbsp olive oil
1 crock pot
Instructions
The Night Before (if you're lazy like me...)
pull the chicken out of the freezer and put it in the fridge.
In a large tupperware container, put the julienned onion, the carrots, and the garlic as well as the spices and the olive oil.
Close the lid. Shake. Refrigerate.
Chop any green/red/yellow peppers and put in a separate container.
Go to sleep.
In the AM while you're waiting for the coffee to brew....
Scrape the veg mixture into the crockpot. (Always the root veg on the bottom of the crockpot).
Add the somewhat dethawed chicken. No worries if it's not quite there. Honestly, you could probably throw it in rock solid.
Dump the peppers on top.
Add enough broth/beer to cover the chicken. 12oz for this should be fine. I used one can of beer for 3 thighs.
Set the crockpot to medium-low (or on my ghetto pot, just low)
Grab your coffee and go to work.
8-10 hours later when you come home and open the door, pause to smell the delightful spiced aroma of dinner.
Easily doubled or tripled, just as easy in the oven (with defrosted chicken, say 350 for an hour or 2 with a good stir and a turn?)
Save all those wonderful juices for stew, or to make rice (yes, in my rice cooker).
