1 lg (49.5oz) can or 3 small (14.5oz) cans chicken broth
1 (9oz) pkg refrigerated cheese tortellini
15 oz can white kidney or cannelloni beans, rinsed & drained
14.5 oz can Italian diced tomatoes, undrained
1 1/2 t dried basil
1 T red wine vinegar or cider vinegar
5 oz can premium chunk breast of chicken
shredded parmesan cheese, optional
coarsely ground pepper, optional
Instructions
In a large saucepan, bring broth to a boil. Stir in tortellini. Reduce heat; simmer, uncovered, 4 min, stirring occasionally.
Stir in the beans, tomatoes, and basil. Simmer for 4 to 6 min or until pasta is tender. Stir in the vinegar. Shred chicken well and add. Spring with Parmesan cheese and pepper, if desired.
