Wash artichokes in cold water, trim leaves, and cut off stems at
base. Remove bottom leaves. Cut off entire top of artichoke and
discard. Spread leaves. Remove center leaves and fuzzy center
with spoon. Discard.
Toss crumbs, olive oil, garlic, parsley, oregano, salt, pepper to
taste. Stuff bread crumb mixture between leaves of artichoke. Fill
center with mixture.
Place stuffed artichokes in 9 inch square baking dish. Pour 2 C of
boiling water around them. Cover with lid or foil. Bake at 350
degrees for 40 minutes or til tender. Remove and cool.
