The night before, put beans in large pot and cover them well with water. In the morning drain the water and add the 8 cups wter and salt to the beans and cook until soft. the beans can now be set aside until closer to mealtime.
Cook sausage along with onions, garlic and peppers. Add veggies to cooked beans. Add the remaining items and heat until the cheese is melted and the flavors are blended.
