In a food processor, mix flour and salt. Add butter and mix until butter is mealy. Add water 1 T at a time - pulsing between each until crumbles hold together when squeezed.

Frissage the crumbles into dough. Pour into pile. Using palms of hands smear a portion down and away to form flakes or planks of dough. Pile these and frissage one more timw. (Only twice.) Form and squeeze dough into round. Wrap with plastic wrap and cool in fridge for 1 hour.
Roll dough out on parchment into a circle (rustic - 3/4 in) and cool again in fridge for 15-30 minutes.

Cut up fruit and toss with sugar. Pile into center of dough leaving 2 1/2 edge around the outside. Fold up edges of dough and pinch to hold sides together. Brush top lightly with water and sprinkle with 1 T sugar.

Bake at 400 degrees on the lower middle rack of oven for 50-55 minutes. Let cool 10-15 minutes on pan and 1/2 hour on rack.
