wash chicken. season it liberally with salt & pepper. smoke over hot coals and wood chips, indirect heat. 3-4 hours. halfway through, bask chicken with oil, sprinkle with salt & pepper. ad more coals and wood.
take chicken from grill, immediately place it in bowl of white sauce, turning the chicken to coat evenly. place chicken on rack, allow to rest for a few minutes.
