Cook vegtables according to package directions until crisp tender; drain. Meanwhile, cook tortellini according to package directions; rinse in cold water.
In large bowl, combine cooked vegetables, water chestnuts, red pepper, tortellini, chicken and dressing; toss gently to coat.
Cover; refrigerate until well chilled. Just before serving, sprinkle with cheese.
