Heat oven to 400 degrees.
Slice peppers into 1 inch rings, you should get 3 rings per pepper for a total of nine slices. Tear bread into 1/2 inch pieces.
In a large bowl mix together beef, pork, bread, 1/2 C tomatoes, garlic, egg, onion, chopped sage, Worcestershire sauce, and chipotle sauce; season with salt & pepper.
Press meatloaf mixture evenly into pepper rings. In a large cast iron skillet, saute all the rings on both sides until golden brown, about 5 minutes per side. Add remaining tomatoes to skillet and bake until cooked through, 20 to 25 minutes.
Hint- the end pieces of the bell peppers can be used in a complimentary dish, such as corn pudding (see recipe).
