1. Wash then slice the squash into 1/2 inch slices.
2. In a small bowl mix the Eggs and Water
3. On a large plate spread out the Bread Crumbs
4. Prepare an assembly line with cut Squash, then Egg Mix, then Bread Crumbs.
5. In a large saute pan heat up a thin layer of Olive Oil on Medium High.
6. In small batches dip Squash into Egg Mix then coat with Bread Crumbs and place into heated Oil. Cook on each side until golden brown, about 2-3 min per side.
7. Once cooked through place on paper towel and pat off remaining oil.
8. Serve Hot
