Grilled Stuffed Flank Steak with Sun-Dried Tomatoe

Ingredients
1/2 C sun dried tomatoes, drained and chopped
1/2 C asiago cheese, shredded
1/4 C capers, rinsed and chopped
2 medium garlic cloves, minced or pressed
1 small shallot, minced
2 T fresh parley leaves, finely minced
2 T olive oil
1 flank steak, 2-2 1/2 lb.
8-12 skewers, soaked in water 30 minutes
butcher's twine
Instructions
Press sun-dried tomatoes and capers between paper towels to remove excess moisture.
From this point on follow the recipe for GRILLED FLANK STEAK STUFFED WITH SPINACH AND PINE NUTS substituting the tomatoes/capers for spinach/pine nuts.
