Melt butter in heavy skillet. Saute onions in butter until soft and transparent, stirring frequently. Cook rice in boiling, salted water for 5 minutes; drain well. Spray shallow dish with non-stick spray.
Blend rice with onions, cheese and half and half; pour into baking. Bake for 1 hour. Serves 608.
NOTE- This makes a LOT! I only make 1/2 of this recipe.
