1 leek, diced- white part only. (save top for garnish)
1 T. oil
2 sweet potatoes, diced
2 sprigs fresh rosemary, chopped (don't use stem)
salt and pepper, to taste
Instructions
Sweat leeks for 3-4 minutes in oil over medium-low heat. Add the sweet potatoes and cook until slightly brown and tender. Add rosemary and season with salt and pepper.

Suggestions
Serve with turkey.
