peel potatoes, dropping them into cold water to prevent discoloration. In a large mixing bowl, combine eggs, flour, onions, and salt. Pat potatoes dry and grate into a sieve. Press out moisture, then stir the potatoes into flour mixture. Spoon about 1/3 cup of potatoes into flour mixture. Spoon about 1/3 cup of potatoe mixture into oil and skillet and flatten it. Fry on each side about 3 minutes, intil golden brown. Serve with applesauce and sour cream.
