Boil potatoes till tender but firm (about 15 mins)Drain and set in the refrigerator to cool.
Cook eggs, peel chop and set aside. Cook and crumble bacon.
Chop the cooled potatoes, leaving skin on. Add to a large bowl, along with eggs, bacon, cheese, and onion. Add mayo, sour cream, hot sauce, salt and pepper. sprinkle top w/ paprika (or cayenne if you like kick)
Chill for an hour before serving!!
