8-9 cups water (enough to sit about 3-4 inches above beans in pot)
2 whole jalapenos (left whole) or 3-4 sliced.
1/2 medium onion sliced
Chunks of ham, canadian bacon or bacon strips.
Instructions
Place beans and oil in a large pot and add water. Bring to a boil. Add chili powder, paprika, garlic, cayenne, cumin and mesquite seasoning. Cook for several hours, until beans are soft. Add water as needed, using ONLY cold water to refill.
When beans are soft remove about 1 cup of beans and place in a bowl. Use a fork to mash beans in bowl and add about 1/4 cup of water. Mash beans well and add back into pot. Stir well.
About 30 minutes before serving add ham or bacon, onion, whole jalapeno, and salt.
Beans should be completely soft with a thickened soup-like consistency.
Taste before serving for saltiness. (As beans cook they may taste less salty, therefore, there is no need to begin salting them until the end. Early salting may also toughen beans, increasing cooking time.)
