Dice about 4-5 medium sized baking potatos, and a half of an onion.
In a large sauce pan, add water to the potatos and onions (just enough to cover them).
Boil over medium heat for about 20-30 minutes or until potatos are tender.
Do not drain the water.
Add an 8 oz block of cream cheese, a can of cream of mushroom soup, and a can of cream of celery soup directly to the potatos. (i use reduced fat cream cheese and fat free soup)
Keep over medium heat until the soup is hot again and cream cheese had melted evenly throughout.
Then top off with cheese, chives, and bacon.
