Creole Seasoning (or some salt and pepper, paprika)
Aluminum foil
Nonstick cooking spray (pref. butter/olive oil)
Instructions
Preheat the oven to 450F
Cover two baking sheets with tinfoil, and spray them well with nonstick cooking spray.
Scrub the potatoes well, and slice into even-sized wedges.
Beat the egg in a shallow bowl.
In a separate shallow bowl mix together the dry ingredients (1c. flour, garlic powder and other seasoning to taste)
Coat each potato wedge first in the beaten egg, then dredge lightly in the flour mix and place on the tinfoiled baking sheet.
Once all the wedges are on the baking sheets, spray the wedges lightly with the cooking spray.
Bake for 10 minutes.
After 10 minutes, turn each wedge over on the baking sheet.
Spray again with cooking spray, and bake for another 10 minutes, or until a knife meets little resistance when inserted into a wedge.
Dipping suggestion-
Mix mayonnaise (or miracle whip) with a heavy dose of garlic powder and a little Frank's Red Hot Sauce.
