Cut the melon into bite size pieces, removing seeds. Peel and slice the onion into rings.
In a small bowl, combine vinegar, salt, pepper, and whisk until salt is dissolved. Drizzle the oil in slowly while continuing to whisk. Add the chopped mint and adjust seasonings to taste.
In a large bowl, combine the melon, onion and feta. Pour dressing over and coat until evenly mixed. Garnish with mint and serve.
Note: compose salad when ready to serve because salt in feta and dressing will make the melon sweat and the salad will be soupy.
