1 Onion

2 Garlic Cloves

1-2 lb. Chicken Breasts, cut into 2 in. pieces

1- T Curry Powder
|
|
1 C Carrots, sliced
|
|
1 C Cauliflower, cut up
|

1 1/2 C Evaporated Milk, or Reg. Milk
|
|
1/2 C canned Chickpeas, drained
|
|
|
|
1/4 C Raisins or Craisins
|
|
1/2 C Frozen Peas, thawed and drained
|

! T Cornstarch or Arrowroot Powder
|

2 T Water
|

Instructions |
|
|
Heat oil over med/high heat and saute onion, garlic and chicken until chicken almost cooked (about 5 min) Add curry powder and cook 3 more minutes.

Steam carrots and cauliflower 5-6 minutes. Add to chicken. Add evaporated milk and cook 5 min. over medium heat.
|
|
|
Add chickpeas, raisins, and peas. Mix cornstarch or arrowroot powder with water. Add to chicken mixture. Cook until sauce thickens, about 3-5 minutes.
