one large butternut squash peeled, seeded and cut into chunks
one medium yellow onion, chopped
2 bartlett pears, cored and chunked
2 cans chicken broth
1 tbsp grated ginger
salt and pepper to taste
Instructions
Sautee onion with grated ginger in olive oil or butter til onion is soft and clear in large pot. Add all other ingredients. Bring to boil. Simmer for 15 minutes. Let cool for a few minutes, then pour into blender or processor until preferred consistency is reached (we like it pretty creamy).
Add baked pumpkin seeds, sour cream, ground red pepper (bird seed) or hot sauce if you like.
