Cook the sausage until browned. Drain in a colinder. Disgard grease

Fry onion and potatos. Add green pepper only when the potatos are about done. Drain well and return to skillet. reserve the oil from this. Scramble the eggs with melted butter.

Combine sausage and potato mixture. Make sure everything is hot and pour into serving bowl. place Scrambled eggs over this.
Now mix in the cheese.

Put two tablespoons oil in skillet with two tablespoons flour. (or any equal portion)
Stir in milk slowly and mix well so that there are no lumps. Salt and pepper. Add enough milk to make the gravy as thick or thin as you like.
Pour this over Potato mixture or serve on the side
