Mix finely chopped onion, pepper in mashed potatoes. Try have half of potato and cheese and get your hands in and mix until well blended, add salt if necessary.
Fill your perogy round with your desired filling, pinch sides to ensure filling won't seep out when cooking.
Potato filling - serve with sour cream and chopped chives/chopped bacon.
Fruit filling - serve with whip cream or bit of ice cream.
