Salt and pepper meat and coat (dredge) in flour. Heat oil and fry
until golden brown. Remove meat.
Saute onions, carrot, celery and garlic with scrapings from pan
until brown; approximately 5 minutes. Add wine if desired. Add
stock mix, parsley, bay leaf and tomatos and enough juice to cover
meat.
Cook in oven at 450 degrees for 1 - 1 1/2 hours.
