1 lg tangerine, peeled, seeded, cut into 1/2 in pieces
1/3 c chopped green onions
3 T chopped fresh cilantro
1 t minced jalapeno (optional)
Instructions
Preheat oven to 475. Rub red snapper on both sides with some olive oil and sprinkle with salt and pepper. Place snapper in 9-in glass pie dish. Mix remaining olive oil and other ingredients in small bowl. Season to taste with salt and pepper,. Spoon topping over snapper,. Bake until opaque in center, about 12 min.
This topping would be delicious on any mild, white fish. If you grill the fish, just top with the raw salsa.
