Slice potatoes into thick strips 3 to 4 inches long and 1/2 inch wide. Season with 2 teaspoons salt and let rest 10 minutes. Run potatoes under water and let dry very well.
Coat a baking sheet with cooking spray. Lay potatoes in one layer and coat with cooking spray, mixing to fully coat. Season with salt and pepper
Bake 40 to 45 minutes, flipping halfway through.
For a variation, sprinkle Parmesan cheese or steak seasoning overtop.
