Mix potatoes, eggs, onion, celery, and parsley in large bowl
In small bowl combine oil, vinegar, salt, sugar, and paprika; pour over potato mixture. Toss lightly to combine. Cover and refrigerate at least 2 hours
Just before serving toss with Mayo
