4 (4 to 4.5 oz. each) boneless, skinless, chicken breast halves, trimmed of fat and pounded flat
2 cloves garlic, crushed
1 tsp. Italian seasoning
1 tsp. crushed red pepper flakes
Salt and pepper to taste
1 (28 oz.) can stewed tomatoes, drained
1 (9 oz.) pkg, frozen green beans
Instructions
Heat the oil in a large skillet over medium-high heat. Season
both sides of each chicken breast half with the garlic, Italian
seasoning, red pepper flakes, salt and pepper. Place the chicken
in the skillet and saute for 5 minutes. Turn the chicken over and
add the tomatoes to the skillet and mix well. Cover the skillet,
reduce the heat to medium-low and simmer for about 15-20
minutes, or until the chicken is cooked through.
Serving size 1 chicken breast half plus 1/4 of the vegetables
(about 3/4 cup)
