Finely chop green onion. Lightly beat eggs with salt and pepper.

Heat wok or frying pan and add 2 Tbsp. oil. When oil is hot, add eggs, stirring until they are lightly scrambled but not too dry. Remove eggs and clean out pan.

Add 2 Tbsp. oil to wok. Add rice. Stir-fry for a few minutes, breaking apart rice. Stir in soy sauce.

|
When rice is heated through, add scrambled egg back into the pan. Mix thoroughly. Stir in green onion. Serve hot.
